Zucchini and Pear Soup with Lentils
Do you like to put fruits and vegetables together when creating new recipes? This is what I had on mind when I married pears with zucchini for this soup.
Pears and apples do well in soups and it is fun to play with them in place of starches like potatoes. When you put together a sweet and a savory you usually come out with a winner. Green pears, green lentils and green zucchini make for a very healthy green soup! Enjoy
Ingredients:
1 white or yellow onion, chopped
1 yellow or orange pepper seeded and chopped
2 zucchini's chopped
3 small or 2 large pears ,seeded and chopped
1 cup green lentils, picked through and soaked
4 cups vegetable broth
1 teaspoon cayenne pepper
1 teaspoon paprika
salt and pepper to taste
In large soup pot saute onion and pepper for 10 minutes. Add lentils, broth and spices. Bring to a boil and then cover and turn down to a simmer. Cook 45 minutes or until the lentils are soft. Add zucchini and pears for the last 10 minutes of cooking time. Taste and adjust seasoning. Serve warm.
