CILANTRO INSPIRED BROTH
Most of you know by now that I like to make stock/broth from some of the discard ingredients in your recipe. Using the cilantro stems makes a tasty and colorful broth. This can be used in place of almost any vegetarian broth, You can adjust this broth by adding in any vegetable that would match the soup you are making.
Ingredients:
3 batches of cilantro stems
skin of 1/2 onion
celery stocks or head of celery
4-5 cups water
Bring all ingredients to a boil and turn down to a simmer for 45 minutes. Strain and use for your soup. Can be refrigerated for one week or frozen for 2-3 months. I love the flavor of cilantro and like to use this broth when making soup, rice and some mexican inspired dishes that require broth.
