TOMATO BROTH
When you are watching your calories or want to eat light- a broth is a great choice. We all think about Chicken or Beef broth but what about Tomato broth. You see "fancy" broths that are low in calories at spa's and retreats. I decided to experiment with Tomato broth and decided to add some things that are good for you and that would impart great flavor. I think a light broth is a good idea for an afternoon snack, very healthy and satisfying. I know cinnamon sticks, ginger and bay leaves are unusual but the flavor is great!
I used cilantro as my main herb for this soup and mixed with all the other ingredients this broth is layers of complex flavors.

Ingredients:
1 whole cinnamon stick
1/2 teaspoon cloves
8-10 whole peppercorns any color, mixed
3-4 bay leaves dried
8-10 medium tomatoes seeded
4-5 garlic cloves chopped
1 knob fresh ginger peeled and chopped
1/2 bunch fresh cilantro with stems
sea salt and ground pepper to taste

Make spice packet using cheesecloth and tie with kitchen string. I couldn't find string so I tied mine with a cilantro stem and it held perfectly. In the packet add, cinnamon stick, cloves, peppercorns and bay leaves.
In Soup pot over high heat add 6 cups water, tomatoes, garlic, ginger, cilantro stems, 1/2 teaspoon salt and spice sachet. Once at a boil reduce heat and simmer uncovered for one hour. Strain using a fine mesh colander into clean pot. Reserve solids. Discard spice sachet. Put one cup of strained liquid in blender with reserved solid and puree. Strain back to pot using colander. Cook over high heat adding salt and pepper to taste. Finely chop cilantro leaves and add to broth. Serve warm. Very nice broth to sip from a cup. I also served it in a bowl with a tablespoon of cooked brown rice per serving.
