VEGETABLE BROTH- USING YOUR DISCARD INGREDIENTS
What is discard broth? Well as you have guessed it is everything you would normally throw away or compost put in a separate pot and covered with water. It is the cleaned stems, skins, seeds, tops, bottoms, stalks, leafs. I add a pinch of seasoning, spices and herbs that I am using in the soup recipe to the broth. I bring to a boil and then turn down to a simmer and cover for the full amount of time that it takes me to make the soup. When you don't have time or the energy for this extra step then you can substitute with a low sodium vegetable store bought broth. I find this so easy to make that I never buy store bought. Because this broth mirrors your soup flavors and uses all the ingredients that you would have just discarded how can you go wrong! Get out two pots when you make soup, one for your soup and the other for your broth! Easy as can be and no added salt, sodium or artificial ingredients like you would get from store bought.
