CHICKEN STOCK
Ingredients:
2 lb. of chicken (legs, backs, tights)
1-2 onions
2-3 carrots
3 stalks of celery
2 bay leaves
1 tsp. of pepper
1 tsp. salt (optional)
8 cups of water

I usually remove skin from the chicken.
Put chicken and vegetables into a pot and cover with water. Add pepper and salt. Bring to boil and reduce heat. Simmer for an hour. Strain through a colander.
