Bacon, Ham and Squash Soup
After the holidays you can sometimes have ham leftovers, it can be the ham bone, a few slices or in my case with this pot of soup I had a chunk which was about 3-4 slices. I decided to marry this ham with a few slices of bacon just to pack in the flavor! Now that I had the protein down I decided to add in squash and beans. The flavor of this soup came out so delicious, one of my favorites! The great thing about bacon is you really only need a slice or two to flavor a entire pot of soup. You could use turkey bacon just as well if that is what you like.
Ingredients:
2 pork or turkey bacon slices
1 large ham slice/piece about 1 1/2 cups chopped
1 yellow or white onion, chopped
2 shallots, chopped
2 garlic cloves, chopped
4-5 medium tomatoes chopped or 14oz can chopped or crushed tomatoes
1 14oz can Northern Great White or Cannellini Beans drained and rinsed
1 large or 2 medium yellow summer squash, chopped
5 cups stock or water (I used water)
black pepper to taste, be careful adding salt because of the bacon and ham
1 teaspoon of fresh dill or favorite herb of your choice
In large soup pot on low cook bacon until almost done. Add ham, onion, shallot and garlic using the small amount of bacon fat in pan. Stir often and allow to cook for 5 minutes. Add water, tomato, squash, beans and pepper. Cook until squash is tender about 15-20 minutes. Taste and adjust seasoning. Add herb and serve. This soup is tasty with a bit of Parmesan or Romano cheese per serving .
