Bacon, Beans and Green's Soup

Most people love bacon and I do as well, but for me it is in moderation. I can take one or two pieces and be satisfied with the flavor it brings to a salad, sandwich or crumbled almost over anything savory.  I decided to take two slices of bacon with rendered fat and see if it could flavor a pot of soup. So out with the olive oil for this recipe and in with the bacon fat (even though it really is just a little bit)
When I was creating this soup it was a rainy day and I decided to stick with some ingredients from my pantry. You don't  see us using canned ingredients often but mixing them with fresh can make for a quick and satisfying soup. This soup is easy to prepare and your house will smell great, how can you go wrong when you start with bacon, onions and garlic!

Ingredients:
2-3 slices of bacon, chopped to small pieces
1 yellow or white onion chopped
2-3 garlic cloves chopped
2 carrots chopped
1 15oz can pinto beans, drained and rinsed
1 15oz can corn, drained
1 packet Knorr beef stock starter plus water  or  3 1/2 cups beef stock
1 cup Spinach, Swiss Chard, Kale or favorite greens, chopped
salt to taste
1 teaspoon ground black pepper
or to taste
1/2 teaspoon red cayenne pepper or to taste


In large soup pot on low cook bacon, when fat is released about 5 minutes add garlic and onion. Cook stirring a few times for 5 minutes. Add carrots and cook covered for 10 minutes
. Add stock, beans, corn, salt and peppers. Cook for 10 minutes, add greens and cook for an additional 5 minutes. Serve warm.
The bacon and the beef stock added so much flavor to this soup. The kick of red cayenne pepper is perfect. I really loved the flavor that this soup brought to the table. Hope you do as well!
