Balsamic Onion Green Bean Soup with Optional Chicken Quinoa Tomato Meatballs
I decided to create this soup with sautéing Onions and garlic in Balsamic Vinegar. What happened in the soup pot was magic!
I love adding aromatics and spices at the beginning of the process. This brings so much flavor to your soup.
2 large white or yellow onion, chopped 4 cloves garlic, chopped 1 teaspoon Balsamic Vinegar 2-3 carrots scrubbed and chopped 1/2 teaspoon or a few shakes/drops Jugo Maggi, Maggi seasoning sauce or soy sauce-Worchester sauce mixed together 1 lb Green Beans trimmed and chopped 5 cups distilled water or vegetarian broth black or red pepper to taste Optional Meatballs link: Chicken Quinoa Tomato Meatballs In large soup of add garlic, onions and sauté for a few minutes stirring a few times. Add balsamic vinegar and Maggi* , water, carrots and green beans. Cook until carrots and green beans are tender about 15-20 minutes. Add pepper and taste, adjust seasonings. Ok to add another drop of Maggi if needed to taste. |

What is Maggi? It is a seasoning sauce used worldwide and I love it. Just a few drops does the trick and brings umami deep rich savory flavor to your dish Maggi seasoning is a liquid vegetable based seasoning. It is most commonly used in soups and sauces and gravies for added flavor. It is very concentrated and has a salty flavor, no added salt to your recipe is needed.
