BROCCOFLOWER, KALE AND CILANTRO SOUP
What is a BROCCOFLOWER? It is a hybrid between a cauliflower and broccoli but really more a cauliflower. It is considered to have a lighter and sweeter taste. Cauliflower is a genetic cross that combines the physical features of cauliflower with the chlorophyll of broccoli. Cauliflower is a member of the cabbage group in the mustard family of plants. It is also good source of vitamin C.

Ingredients:
1 T olive oil
1 diced onion
5 diced carrots
3 diced celery with tops
1 broccoflower
1 bunch kale chopped , 1 lb
1 small bunch cilantro, 1 cup
1 lime
4-5 tomatoes chopped
2 T hot chili pepper sauce (I like Trader Joes)
14 oz organic tri-bean blend, dark red kidney beans, black beans and pinto beans. Rinsed
Cajun Seasoning, I use Penzeys which is known for its spicy Louisiana style flavor. I will list what is included in this mix, you may use some or all of these: sweet paprika, salt, celery, garlic, black pepper, onion, oregano, cayenne red pepper, caraway, dill, turmeric, cumin, basil, bay leaf, mace, cardamom, marjoram, rosemary and thyme. I put a dash of seasoning every time I added a new vegetable to this soup. The deep flavor of vegetables and spice is what makes this soup so special.

Chop onion, carrot, celery and broccoflower and sauté in olive oil. Add Cajun seasoning, and red chili sauce., add vegetable broth. Chop Kale and cilantro. Squeeze lime (after rolling it under palm to release juices) over kale and let sit for a few minutes. Add to soup and put another shake of Cajun seasoning. Cook for 20 minutes. Add drained beans and chopped tomatoes. Cook until all vegetables can be pierced with a fork. Enjoy this very healthy soup! Garnish with fresh cilantro
