Broccoli and White Sweet Potato Soup
Ingredients:
2 medium bunches broccoli, chopped
1 sweet potato, chopped
1 medium onion, chopped
2 garlic cloves, chopped
1 celery stick, chopped
4 cups vegetable broth
1 tbsp. olive oil
1 tbsp., butter (optional)
Salt, to taste
Black pepper, to taste

In a medium soup pot, warm the oil over medium heat. Stir in garlic, onion, celery, and cook, stirring frequently, until they turn translucent and soft but not brown, about 7 minutes. Stir in the broth, broccoli and sweet potato. Bring to a boil. Lower the heat and simmer, covered, about 20 minutes.
In food processor, working in batches, puree the soup. Return soup to the pot and heat. Serve with pine nuts, parsley and a dollop of yogurt.
