BRUSSELS SPROUTS, CORN AND SPINACH SOUP
Another GREEN soup, Brussels Sprouts, Spinach and Cabbage and lets not forget the corn. You could use our corn broth recipe in this soup, such a great use for your cobs. This soup is filling and so healthy. You can use this soup as a weight loss soup.
Ingredients:
1 yellow onion, chopped
2-3 stalks celery, chopped
2 ears of corn off cob (save cob to make corn broth)
1 lb Brussels sprouts quartered
1/4 quarter green cabbage chopped
1 teaspoon crushed red pepper
5 cups water/vegetarian broth
2 Tablespoon fresh cilantro or your favorite herb
2 cups rinsed and chopped fresh spinach
salt and pepper to taste
squeeze lemon juice
In large soup pot saute onion and celery for 5 minutes. Add broth, Brussels sprouts, corn, cabbage.
Bring soup to boil -turn down to a simmer for 20-30 minutes. Add crushed red pepper, salt and black pepper to taste.
Turn soup off and add spinach. Spinach will cook with the warmth of the soup. Serve warm with fresh chopped herbs and a squeeze of a lemon or lime if desired.
