Bulgur and Kale soup
3/4 cup bulgur 8 large leaves of kale, chopped 4 small carrots, chopped 1 medium onion, chopped 1 cup chopped tomatoes 2 celery sticks, chopped ½ tsp. pink or red pepper 1 tsp. ground coriander 2 tbsp. olive oil Salt, to taste 8 cups water or broth Warm olive oil in a large soup pot over medium heat. Add carrots, onion, celery and sauté for 5 minutes. Add tomatoes and sauté for another 5 minutes, stirring occasionally. Add bulgur, kale and water, bring soup to a boil, and simmer for the final 15-20 minutes. Sincerely...Nellie |
