SWEET AND SPICY-CARROT , COCONUT AND GINGER SOUP
Let's talk about Coconut Milk. You will find two kinds, one that is thick and fatty which is great for desserts while the "thin" milk is great for savory international flavors which makes it perfect for soups and stews. The subtle sweet flavor is perfect with Thai and Curry spices.
Coconut milk has high fiber content which help fill you up fast so that you can eat less and still get the nutritional benefits of a full meal. As a dairy alternative it is good for those of you who are lactose, soy and nut intolerant. Coconut milk is high in Potassium, Magnesium and Phosphorus which helps us build strong bones!
If you are using the light variety it will add about 45 calories per serving and the regular will add about 75-90 calories per serving. This recipe does not really have much more than the coconut milk in the way of calories so I feel like it is still a healthy soup but it tastes like it is not.

Carrot Soup can be done in so many ways, this recipe is so simple and yet so delicious. While it is cooking your house will smell so good and you will love the richness of this soup recipe. I created this recipe with ingredients I had on hand but will make it over and over again, it is Delicious !
Serves 5-6
Ingredients:
2 lbs carrots chopped
1 large apple, any variety chopped
1 tsp. ground ginger,
1 tsp. salt
1 tsp. ground pepper
1/2 -1 teaspoon red pepper sauce-optional (can use pinch chili flakes or cayenne pepper)
14 oz. can light coconut milk
5 cups water
Serves 5-6
Ingredients:

Wash and scrub carrots and apples. Chop without peeling. Place in soup pot and cover with water. Add ginger, salt and pepper. Cook until carrots and apple are tender, 25-30 min. Turn off the stove, add coconut milk , red pepper sauce and let cool. Once cooled using hand blender, puree and serve. This soup is simple, healthy, rich and delicious.
