CARROT, APPLE, ONION AND FENNEL SOUP WITH SAGE
I love creating a new recipe with ingredients you would not think go together. This soup is one of those. Easy to prepare, delicious and healthy. What a good combination. Now let's get chopping!
Ingredients:
1 Yellow or White medium to large onion, chopped
1 Large or 2 small apple, I used red but you could use green, chopped
1 fennel bulb, cored and chopped
3 large or 5 small carrots, scrubbed and chopped
5-6 leaves fresh sage or 1 teaspoon dried sage
salt and pepper to taste
5 cups veggie broth or distilled water
drizzle olive oil
Directions:
Chop, chop and chop!
Saute onion, apple and fennel in large soup pot with a drizzle of olive oil for 10 minutes, turning over a few times. Add carrots, sage, salt and pepper and broth or water. When carrots are tender about 20-25 minutes remove soup from heat and allow to cool a bit. Using a hand blender or transferring to a blender or food processor, blend soup. The fun part about using a hand blender is you can leave some pieces in your soup if you don't want it completely pureed.
Serve warm with a garish of fresh sage.
