CHICKEN AND TOMATO SOUP
I love tomato soup and I love chicken soup, so let's put them together. This soup can be made with just a few pieces of chicken. I used skinless boneless breast pieces which made putting this soup together a snap. The flavors
mixed well, but of course anytime you are roasting tomatoes and basil together you can't go wrong! You will need a food processor to mince the chicken and puree the roasted vegetables. Let's get started:

Ingredients:
2 Chicken Breast or 8 chicken tenders skinless 2 carrots chopped 1 onion chopped 7-9 large tomatoes 10 large basil leaves I teaspoon each dried basil, oregano and thyme |

In large soup pot add chicken seasoned with salt and pepper and cover with 8 cups of water. Cook on medium for 25 minutes. Let cool. Chop chicken (placing one piece aside.) Put chopped chicken in food processor. Mince and set aside. Shred the chicken you did not put in the food processor to use for a garnish.
Put chopped carrots, onion, tomatoes, basil and dried seasonings in bowl with a teaspoon of olive oil and using your hands mix to coat everything with seasonings. Place on cookie sheet in a single layer. Cook at 425 for 35-40 minutes until vegetables are carmalized and carrots are soft. Let cool and put in food processor Puree to smooth.
Add a shake of each seasoning, minced chicken and pureed roasted vegetables to chicken broth. Bring to a soft boil and turn down to a simmer for 10-15 minutes.
Garnish with shredded chicken, fresh thyme or basil. .
This soup is protein packed and nutritious with the delicious roasted veggies. I hope you love it!
The minced chicken almost looks like a tiny pasta or rice in the soup. It is a bit unusual in texture but is quite delicious.
If you want your chicken to blend more in the soup then you can add liquid to the chicken in the food processor and it you will end up with more of a smooth soup. Either way, I hope you enjoy it.
