CHICKEN VERMICELLI SOUP
This is a simple, quick to prepare, and nutritious soup for your kids. It takes only 20 minutes to make this healthy homemade soup. If you have kids, you need some quick kids’ recipes, because sometimes they want it right away. I am a working mom with not much time, but I want to cook and feed my child with healthy and nutritious meals. This soup was made and served in 20 minutes after my hungry son screamed that he wants to eat right now. Some baby carrots helped him to wait.
Preparation time: 5 minutes Cook time: 15 minutes Ingredients ½ lb. chicken breast, medium diced 1 carrot, peeled and small diced 1 celery stalk, small diced ¾ cup vermicelli 4 cups water, vegetable or chicken stock 1 tbsp. olive oil Sea salt, to taste |

Chop carrot and celery in small pieces so that they cook faster.
Warm oil in a soup pan over moderate heat. Add carrot, celery, and sauté, stirring occasionally, for 5 minutes. Add water (vegetable or chicken stock) and chicken breast, salt, bring to a boil, and simmer for 7 minutes. Add vermicelli and cook for the final 3-4 minutes.
