Chicken in Vegetable Sauce

Preparation Time: 10 min Cook Time: 1 hr 30 min 2 12/ ponds boneless chicken breast tenders, cut into 1.5 - 2 inch serving pieces 1 red bell pepper, coarsely chopped 1 large onion, coarsely chopped 5 medium tomatoes, chopped 4 garlic cloves, peeled and chopped 1-2 tsp. red chili powder 1/2 tsp. cumin powder 1 tbsp. dried cilantro 1 tsp. black pepper Sea Salt, to taste 1 tbsp. olive oil 1/2 cup water or vegetable or chicken broth |
Warm olive oil in a heavy-bottom pan over medium heat. Stir in onion, garlic, bell pepper and sauté, stirring, for about 10-15 minutes until vegetables are soft. Add chili, cilantro, black pepper, salt, cumin and cook for 1 minute. Add tomatoes and continue cooking for another 10 minutes. Transfer vegetables to food processor and puree to make a past. Return vegetable sauce to a pan, add chicken and simmer over medium-low heat for about 1 hour.
