CHILLED CUCUMBER AND AVOCADO SOUP
This soup is quick and easy to make. I will give you four different garnishing options. You can also use your own creativity for garnishing this soup.
Ingredients:
10 Persian cucumbers or 3 large cucumbers, peeled and sliced
3 ripe avocados, peeled and cut
1 tbsp. fresh lemon juice
Cold water
2 tbsp. olive oil
Sea salt
Pepper
Options for garnishing:
1. Red bell pepper and dill
2. Goat cheese and glazed balsamic vinegar
3. Plain yogurt and mint
4. Tomatoes and cilantro
Puree cucumbers and avocado with lemon juice, salt, pepper and olive oil until very smooth.
Try it and dilute with water to the consistency that you like. I like this soup very thick.
Transfer to a bowl and refrigerate for at least 30 minutes before serving.
Garnish and enjoy.
