Corn and Seafood Chowder

This soup can be very easy to make using canned low sodium chicken broth or you can follow our recipe for seafood stock using seafood shells which is what I did with this soup. I made crab for dinner and then made stock from crab shells. Having the stock on hand led me to create this recipe. If you have left over corn on the cob all the better. Fresh corn can be substituted for frozen corn kernels and then adding in a can of creamed soup adds some creaminess.

Using the seafood stock and adding celery, carrots potatoes, corn and onion and a can of crab made for a easy seafood chowder.

Ingredients:
1 onion, chopped
3 celery stalks, chopped
2 carrots scrubbed, chopped
14 baby potato's scrubbed and diced small 
2 corn of the cob, kernels removed
1 can crab, drained or 1 piece of white fish fillet
1 can cream of corn soup , optional
1 tablespoon Seafood Seasoning
5 cups seafood stock, corn stock or chicken stock
drizzle olive oil




In large soup pot drizzle olive oil, add in onion, celery, carrots and seafood seasoning. Add in potatoes and stock . Cook until potatoes are fork tender about
10 minutes. Add in corn, crab and can of cream of corn soup. Stir and cook on low for 5 minutes. Taste and adjust seasoning. Be careful with adding in any salt as the seasoning mix will have salt.


Adding the can of creamed corn is optional as I know many cooks will want to leave out canned ingredients. The creamed corn is meant to add creaminess in without using cream. You could substitute this ingredient with 2 tablespoon's plain Greek yogurt or light sour cream. Enjoy trying new things and always remember to have fun in the kitchen!

Garnish with chopped green onion or scallion
