Making a tower of yumminess is pretty easy especially if you are working with your favorite ingredients. For this special dish I Roasted Gold Beets and stacked it with Dungeness Crab, Avocado, Mango and Baby Greens. This would be a delight with lobster or a mixture of both crab and lobster!
The plate is surrounded by Roasted Brussels Sprouts and a small serving of truffle risotto. Part of the fun is decorating the plate but of course the most fun is eating this!
The homemade sauce is lemony and has a bit of a kick. Building food towers are so much fun. You can use a glass if you don't have the chefs stacking tool/food ring and then just turn it upside down on your chilled plate. Get ready for a delightful dish.
Crab, Roasted Golden Beets, Avocado and Mango Tower
Dressing,:
4 Tablespoon plain Greek yogurt
1 teaspoon lime juice
1 celery stalk finely diced
1 teaspoon Dijon mustard
1/4 teaspoon fresh dill
salt and pepper to taste
1/4 teaspoon horseradish
1 dash red pepper sauce
1 dash Worcestershire sauce
Mix all ingredients well in a bowl or put in mason jar and shake , put aside and allow flavors to marry.
Ingredients:
Serves 2-3
3 large or 5 small gold beets, peeled and sliced
1 pound Dungeness Crab steamed and removed from shell, keep a few claw shells aside for garnish if desired
1 large mango, peeled and cubed
1 large avocado peeled and cubed
assorted baby greens
chive, chopped for garnish
salt and pepper to taste
This dish could be served in a chilled glass or martini glass. It can also be stacked in a ramekin and turned upside down on a plate or in a food ring which is the easiest way and will give you a beautiful presentation . Keep in mind your final presentation should be stacked in the order that you want to present it. I like the ingredients in this order: Bottom to top- Beets, Avocado, Greens, Mango and Crab. Dress salad and garnish with chives
Pre-heat oven to 400. Place beets in single layer un-touching with a drizzle of olive oil on a baking sheet. Roast in oven until beets are brown and fork tender about 25 minutes. Set aside
On serving plate place Food Ring . Load the Beets first and press down with back of a spoon. Add Avocado and press down. Drop in a few baby Greens and then the Mango. Press down again and add Crab. Lifting metal ring up slowly you will find a beautiful, colorful stack. Serve with dressing around the plate for dipping. Very nice to serve on a cold plate.
