Creamy, no cream- Tomato and Cauliflower Soup
I love adding onion and apples in my soups, just that little sweetness and spiciness to the underlining flavor of the soup adds so much. In this recipe I added the spices at the beginning, the aroma of the spices, apple and onion were out of this world. As an experiment I left the greens and core of the cauliflower in the soup. I decided not to discard any of the cauliflower and it worked and nothing went to waste. I used a fiesta cauliflower (orange) but you could use any color of cauliflower.
Ingredients:
1 large cauliflower, all chopped
6 large tomatoes, chopped
one white or white onion, chopped
one large Fuji apple, chopped
garlic, pepper and sea salt seasoning mix, 2 teaspoons
6-7 cups distilled water
drizzle olive oil
In large soup pot add drizzle olive oil, onion, apple and seasoning. Cook on medium for 5-10 minutes stirring a few times. Add cauliflower, tomatoes and water. Bring soup to a boil and then turn down to simmer. Cook for 25 minutes, taste and adjust seasoning. Be sure the cauliflower can be easily pierced with a fork. If it is not tender cook for a few more minutes. Allow soup to cool and then blend using a stick blender, food processor or blender.Serve topped with pestou.

one handful Dandelion, Spinach and Arugula or about 1/4 cup each
