FISH WITH BELL PEPPERS
Serves 2-3

1 pound fish fillets, cut (instructions below)
2 bell peppers, chopped -red, orange or yellow 1 large tomato, chopped 1/2 onions, chopped 1/ 2 tsp. turmeric 1 clove garlic, minced 2 tbsp. basil-green, chopped 1 tbsp. olive oil Sea salt, to taste Ground black pepper, to taste 1-2 tbsp. lemon juice |

Preheat oven to 350F.
Chop vegetables. In a large skillet, heat olive oil over medium heat. Add onion, garlic and sauté for 3 minutes. Add bell pepper and continue cooking. In 5 minutes, add tomatoes, turmeric, salt, pepper, lemon juice and cook for another 10 minutes. Turn off heat and then add chopped basil.
Across width of fish, slice into 2" wide pieces, arrange pieces of fish in a baking pan, top with sautéed vegetables, bake 20-25 minutes.
