FRESH FIG AND RICOTTA PIE
I have a fig tree and it is full of figs. I decided to create a fig pie and to try it a few different ways, savory and sweet. The recipe is the same with the addition of caramelized onions for savory and a drizzle of honey for sweet. You could use this fig pie as an appetizer and it would be delicious and kind of a fancy starter.
Ingredients:
pre-made pie shell (because I'm not a baker) Ricotta cheese 8 oz whole milk or skim milk , ricotta is creamy and slightly sweet. (If vegan use tofu ricotta) 8-10 large figs sliced thin and stems removed 1 teaspoon pure vanilla extract 1 teaspoon pure almond extract 1/2 teaspoon balsamic vinegar 1/4 cup sliced almonds 1 onion OR 2 tablespoon of honey 1 sprinkle of brown sugar 2 tablespoons lemon zest |

Pre-bake pie crust per package instructions and set aside.
In a mixing bowl add ricotta cheese, vanilla, almond and balsamic vinegar and then whip until well blended.
In fry pan place sliced onions and a light sprinkle of brown sugar. Cook until onions are soft and caramelized. You do not need any oil for this step.
Layer your pie with cheese, onions, figs, almonds and lemon zest. Cover exposed crust with foil.. Bake at 350 for 35 minutes.
For sweet version omit onions and lightly drizzle figs with honey before baking.
