Garlic, Sweet Potato and Butternut Squash Soup
Ingredients:
I butternut squash peeled and seeded and chopped
4 sweet potatoes peeled and chopped
4-5 cloves of garlic sliced/minced
2-3 shallots, peeled and chopped
salt and pepper to taste
In medium size Crock Pot put all ingredients and cook on low for 8-10 hours or on high for 6 hours. Allow to cool and blend in blender in batches or using a hand blender puree soup. I left some chunky pieces of squash and potato for texture but this soup can be silky smooth if desired. That's it!
When you are using a crock pot it does a lot of the work for you which is so wonderful on busy work days, enjoy!
