Gold Beet Soup with Beet Greens
Golden Beets are one of my favorite foods. I love them roasted and love them in this soup! This is a very simple soup with few ingredients but so very tasty. You can use a chicken or vegetarian broth and of course save the top beet greens to add in the soup at the end of cooking. No waste with this recipe.
3 Gold Beets and top greens, peeled and chopped like the shape of a French fry
1 white or yellow onion, chopped
3 garlic cloves, peeled and chopped
4 cups chicken or vegetarian broth
salt and pepper to taste
drizzle of olive oil
In large soup pot drizzle olive oil, garlic, onion and salt and pepper. Cook on low for 10 minutes stirring a few times. Add chopped beets and broth. Cook 20-25 minutes until beets are fork tender. Taste and adjust salt and pepper. Add beet greens to soup and cover. Turn flame off and let sit for a few minutes. Serve and enjoy this light and refreshing soup.
