Green Beans Almond
I found this recipe in a “Gourmet Bahamian Cooking” cookbook that I brought from my last trip to the Bahamas. That recipe has earned my attention
for its simplicity and few ingredients. I substituted butter that was recommended in the original recipe, to an olive oil, blanched almond to unblanched almond flour and added lemon zest. The result was amazing! It is definitely my favorite bean dish.

Rinse beans under cold water and drain. Slice off the ends of each bean then cut them into 1 1/2 inch pieces. In a pot, bring water to a boil and add beans and salt. Blanch beans over medium-high heat for 10-15 minutes. Drain beans through a colander.
Warm olive oil over low heat, add almond flour (unblanched whole almonds, finely ground) and cook until golden, stirring. Remove from heat; add salt, lemon juice and lemon zest. Pour over hot beans; mix and serve.
How to make almond flour: Place almonds in a blender or food processor with a small amount of sugar that will prevent almond to become paste. Process on low speed just until almonds are ground into a coarse meal about 30 seconds.
