GREEN BEAN SOUP WITH INDIAN SPICES
GREEN BEANS are so GOOD for you! You might know them as String Beans or Snap Beans but no matter what you call them they are loaded with nutrients. One cup of green beans has 122% of the recommended daily allowance of vitamin K, they also are a good source of fiber.
Ingredients:
8 cups stock
1 lb green beans trimmed and cut in pieces
1 chopped onion
3 cloves garlic chopped
4 medium carrots sliced
10 oz grape yellow or red tomatoes ( 1 handful)
spices: 2 teaspoon mustard seeds, 2 teaspoon coriander, 1/4 teaspoon ground ginger, salt and pepper
serves 8-10

Combine all ingredients is large soup pot , bring to boil and turn down to a simmer for 25 minutes Add the grape tomatoes and let cook for 5 minutes. Serve warm. The Indian spice combination and the green beans go so well with each other. I also like the way the baby tomatoes brighten up the soup.
