Green Lentil Soup with Spinach

Green Lentil Soup with Spinach
I find different opinions on whether green lentils have to be presoaked. Green lentils* do not need presoaking but can be presoaked to shorten cooking time. I usually soak lentils overnight, since it does not require much effort to put lentils in a bowl and add water. Remember to place lentils in a colander or sieve, and rinse with cool running water before soaking.

Serves 6-8 
Preparation Time 10 min      Cook Time: 50 min 

Ingredients

1.5 cup green lentils*
2 carrots, chopped
3 celery sticks, chopped
1 medium onion, chopped
3 garlic cloves, chopped
2-3 cups spinach, chopped
2 medium potatoes, chopped
15 oz canned tomatoes, chopped
2 tbsp. olive oil
1 tsp. coriander seeds, crashed
1/2 tsp. fenugreek seeds, crashed
1 tsp. cumin seeds, crashed
1 tsp. red pepper
7-8 cups boiled water or vegetable stock
Salt, to taste




Over medium heat warm olive oil in a soup pan. Add onion, garlic, celery, carrots and sauté for 10 minutes, stirring occasionally. 

Add all spices (coriander, fenugreek, cumin, red pepper) and cook for 1 minute, stirring; then, add tomatoes and continue to cook for 10 minutes.

Add lentils and potato, bring to a boil, remove foam and cook for about 25. If the lentil was not presoaked, add lentils first and cook them for 20-30 minutes (lentils should be almost done before adding the potatoes) . Then, add potatoes and cook for another 20-25 minutes.

Add spinach and salt. Continue cooking for the final 2 minutes.

Serve with chopped parsley.

Tip: Salt added to the cooking water will toughen lentils. Add salt once the lentils are completely cooked.
