GREEN SPLIT PEA SOUP WITH THYME AND CHICKEN BREAST
This soup is perfect for wintery day.
Serve 6
Preparation time: 10 minutes Cook time: 1hr. 15 min.
Ingredients:
2 carrots, chopped
1 large onion, chopped
2 celery ribs, chopped
2 cups dried green split peas, rinsed
1 cup frozen peas
2 thyme springs
2 bacon slices, chopped
½ lb. chicken breast, chopped
2 tbsp. olive oil
½ tsp. black pepper
Sea Salt
6 cups water, vegetable or chicken stock
Heat 2 tbsp. oil in a heavy pot over medium heat. Add chopped bacon and cook 2 minutes. Add carrots, onion, and celery and cook, stirring, until softened, 6 minutes. Add split peas, thyme, salt, pepper and stock, bring to a boil, reduce heat to medium-low and simmer, covered, stirring occasionally, until peas are falling apart, about 1 hour.
Add frozen peas and chicken breast and simmer for 5-7 minutes. Discard thyme.
Serve soup topped with fresh thyme.
