Jalapeno and Lime Salmon
It is one of those simple recipes. If you are busy...busy..busy and have no time, but still want to eat healthy, this recipe is for you. All it requires are five minutes of chopping and mixing and fifteen minutes of relaxing.

Preparation Time: 5 minutes Cook Time 15 minutes
1 pound salmon fillet
1 lime, juice and zest
1 tbsp. honey
2 tbsp. soy sauce
1/2 jalapeno, chopped
1 tbsp. Dijon mustard (optional)
1 tbsp. olive oil
Preheat oven to 360 F.
Across width of fish, slice into 2" wide pieces; arrange pieces of fish in a baking pan. In a medium bowl combine lime zest and juice, honey, soy sauce, olive oil and jalapeno. Whisk to blend well. Add marinade to fish and leave for 10-20 minutes at room temperature. Transfer fish to oven and bake 15-20 minutes. Keep in mind that the time your fish cooks will vary depending on how thick your fish pieces are and also how hot/cold your oven runs. I usually cook it for 15 minutes.
Serve immediately on a bed of green salad.
