Kale, Spinach and Tomato Soup with Garbanzo Beans
Here is another great soup to use while on your journey to a healthy weight. I have used Kale and spinach but you could use one or the other. I had tomatoes and cabbage in my garden, so in they went. I finished off with a squeeze of lemon, cayenne pepper and garbanzo beans. The overall flavor is a winner. I hope you like it and I wish you good health. Ingredients:
1 white or yellow onion chopped
3 carrots scrubbed and chopped
3 celery stalks chopped
3-4 garlic cloves chopped
1 bunch of spinach, cleaned, trimmed, chopped
1 bunch Kale, trimmed and chopped
1 15 oz can garbanzo beans rinsed and drained
6-8 medium tomatoes
5-6 leaves of cabbage, optional
1 tablespoon lemon juice , to taste
1/2 teaspoon cayenne pepper, to taste
1/2 teaspoon chile flavored salt or sea salt
ground black pepper to taste
5 cups of vegetarian broth or distilled water
1/2 lemon for juice
On chopped kale drizzle lemon juice and set aside. Saute onion, carrots, celery and garlic in large soup pot with drizzle olive oil for 10 minutes stirring a few times. Add broth or water, garbanzo beans, kale and cabbage, cook 5 minutes.. Add seasoning and taste, adjust as needed. Add tomatoes and cook uncovered for 5 minutes. Be careful with your hot seasonings adding a pinch at a time and adjust to the heat you enjoy. Soup is delicious with a squeeze of lemon per serving.
