Left-Overs Ham- Soup
After a holiday and left overs are saved, it is time to transform them in to another recipe. I did not have the ham bone but wanted to make ham and potato soup. I decided to keep it simple and it turned out do delicious. When chopping the ham remove as much fat as you can and discard.
Ingredients:
2 cups chopped ham, fat removed
2 red potatoes, scrubbed and chopped
3 celery chopped
3 carrots, scrubbed and chopped
1 onion
1 tablespoon cilantro or favorite herb, chopped
salt and pepper to taste
5 cups water or beef broth
green onion/scallion for garnish
In large soup pot cook chopped ham and onion stirring a few times until onion is translucent. Add carrot and celery and cook for 5 minutes. Add chopped potatoes, salt and pepper. Be careful with the salt because of the salty flavor from the ham. Add 5 cups of water and cook until potato is tender about 20-25 minutes. Taste and adjust seasoning. Serve warm with scallions chopped on top. Enjoy and always ask for the leftovers so you can make soup later!
