Minestrone with green beans and Italian Sausage
In Italy, there is no typical recipe for minestrone soup because it is prepared with any vegetables that happen to be available that day. Doesn't that make this soup so much fun! This soup was created because I had green beans and Italian sausages to cook with and at the end of this soup it had to be called Minestrone! This soup will simmer in the slow cooker while you're away. Just stir in the pasta when you get home!
Ingredients:
3 Italian Sausage, Chicken, turkey or Pork (I use chicken)
1 yellow or white onion chopped
3 -4 garlic cloves chopped
1 lb green beans trimmed and chopped
2-3 carrots, scrubbed and chopped
1 15 oz can chopped tomatoes, Italian style undrained
nd drained
1 small package small shell pasta
1 teaspoon oregano and 1 teaspoon basil
water to cover about 5 cups
salt and pepper to taste
optional. shredded or shaved parmesan to garnish
Mix all ingredients except pasta in 3 1/2- 4 quart slow cooker. Cover and cook on low for 8-10 hours. About 30 minutes before serving, stir in pasta. Increase heat setting to high. Cover and cook 20-30 minutes longer or until pasta is tender.
