PARSNIP AND POTATO WITH SHRIMP SOUP
It is hard to believe, but this is my toddler son’s favorite soup. I had a chance to try this soup, but only a small serving because my son ate the whole soup.

Ingredients:
1/2 lb. small shrimp 1 parsnip, small diced 1 large potato, small diced 1 tsp. ginger, minced ¼ tsp. fennel seeds, crashed Salt to taste 1/2 tsp. black pepper 1 tbsp. olive oil 5 cups vegetable stock 1tbsp. chopped dill for garnishing |

Put olive oil in a soup pot over medium heat. When it is warm, add parsnip and sauté it, stirring, for 5 minutes. Add ginger and cook for another minute.
Pour in 5 cups of vegetable stock, potatoes, salt, pepper and bring to a boil, then, adjust the heat, so, the soup
bubbles gently. Let soup cook for 15-20 minutes, then, add shrimp and cook for the final 4 minutes.
Taste, adjust the seasoning and serve with fresh chopped dill.
