Potato and Green Bean Soup
Serve 6
Preparation Time: 15 Cook Time: 35-40
2 lb. potatoes, peeled and sliced
1 lb. green beans, slice off the ends of each bean then cut them into 1-inch pieces
1 medium onion, chopped
2 garlic cloves, minced
5 cups vegetable or chicken stock
1 tbsp. olive oil
1 tbsp. butter
½ tsp. nutmeg
1 bay leaf
½ tsp. black pepper
¼ tsp. red pepper
Green onion, plain yogurt or sour cream for garnishing.
In a soup pot, warm olive oil and butter over medium heat. Add onion, garlic, nutmeg, and sauté for 5 minutes. Add stock, potato, salt, bay leaf and peppers, bring soup to a boil and cook for 15 minutes. Add green beans and simmer for 15 minutes, until beans are tender and potatoes are falling apart.
Garnish with a dollop of plain yogurt or sour cream and chopped green onion.
