The many colors of Carrots soup!
Carrots, Garlic, Shallots and Parsnips or potato, How simple does that sound? I love making a easy soups that are healthy and tasty. Using carrots as your main ingredient in soup always comes out delicious.
8-10 large carrots scrubbed and chopped
2 parsnips scrubbed or 1 potato, chopped
2 shallots chopped
2-3 cloves of garlic, chopped
4-5 cups distilled water
In large soup pot add all chopped ingredients and allow to cook on medium for a few minutes. The garlic will start to give your nose a treat! Add Water and cover on low simmer until carrots and parsnips are soft. Remove from heat and allow to cool. Using a blender of food processor blend soup. Add salt and pepper to taste. Serve warm
