Red Lentils and Bell Pepper Soup

Prep Time: 15 min Cook Time: 30 min.


Ingredients:


1 cup red lentils, rinsed
1 carrot, chopped
3 small bell peppers (orange, red, yellow), chopped
3 garlic cloves, chopped
1 large tomato, chopped
1 cup cooked garbanzo beans
1 tsp minced fresh ginger or ginger paste
1 tsp coriander
½ tsp. cumin
2 tsp. olive oil
2 bay leaves
1 tbsp. fresh lemon juice
5-6 cups water

Warm olive oil in a large soup pot over medium heat.  Add garlic, ginger, coriander, cumin and sauté for 1 minute, stirring. Add carrot and bell peppers and continue sautéing for 5 minutes, stirring.  Add tomato and cook for another 5 minutes.  Pour in water, add lentils and cook for 15 minutes. Add cooked garbanzo beans and simmer for the final 5 minutes. Add lemon juice and remove the soup from the heat.

Enjoy with a fresh cilantro!
