SWEET PEPPERS AND ARTICHOKE HEARTS SOUP

Don't you just love the sweet little peppers that are available in all the stores. Great for snacking, for making snack size dishes like mini stuffed peppers and also a great flavor for soup!  I like that you can have a good mixture of the different flavors and colors in the soup. I mixed this soup with lemon pepper and artichoke hearts. It is a fun combination of flavors.
Start with cutting the peppers in half, removing the stems and seeds. Cut your onion in 4 sliced and chop your carrots. Place on a roasting pan and drizzle with olive oil. Place in a 425 oven for 20-25 minutes turning over once. Take out and allow to cool
Once cool slide skin off peppers with your fingers. Chop peppers, carrots and onions together to bite size pieces.
Place in large soup pot and cover with vegetable broth. Add chopped artichoke hearts, lemon pepper and salt. Cook for 15 minutes and taste to adjust seasonings. Cool and place in food processor or blender.
Once blended put soup back to soup pot and add sour cream. Heat for a few minutes until warm and serve.
Ingredients:

1 bag mini sweet peppers cut in half
1 red or purple onion sliced
4 carrots chopped
1 14-15 oz can artichoke hearts drained and rinsed
1/2 cup light sour cream or non fat greek yogurt-optional
1 Tablespoon lemon pepper
salt to taste
cilantro or fresh herb garnish
