SALMON AND CELERY SOUP
Serve 4
Preparation Time: 10 min Cook Time: 20-25 min Ingredients 1 lb. skinless boneless salmon file, cut into 1-inch cubes 4 celery sticks, chopped 1 large carrot, chopped 1 medium red onion, chopped 4 cups vegetable or chicken stock 4 tbsp. parsley, chopped 1 tsp. crashed coriander seeds 1-2 tbsp. olive oil ½ turmeric ½ black pepper 1 tbsp. fresh lemon juice Sea Salt |
Warm olive oil in a soup pan over medium heat. Add chopped celery, carrot, onion and saute, stirring occasionally, for 10 min. Add vegetable or chicken stock and bring soup to a boil over a high heat. Reduce heat to a medium and simmer for 5 minutes. Add salmon, coriander, turmeric, black pepper and salt and gently boil for 5 more minutes. Add chopped parsley and lemon juice and remove soup from the heat.
Garnish with parsley.
