SCRAMBLED EGGS WITH BELL PEPPER AND TOMATO
Serves 2-3
Ingredients
1-2 tablespoon olive oil
1 tablespoon butter (optional)
1 small onion, chopped
1 red bell pepper, chopped
5 large eggs
2 medium tomatoes, peeled and chopped
2 tablespoons cilantro
2 tablespoon parsley
Salt and pepper to taste
Basil for garnishing
Heat olive oil and butter in a medium skillet over medium heat. Add onion and pepper. Sauté for about 5 -7 minutes, until tender. Add tomatoes and cook for 8 minutes, stirring.
Meanwhile, crack the eggs into a medium bowl and whisk. Add salt and pepper and beat to blend. Pour the egg mixture into vegetables and stir them gently until the eggs are ready, about 2-3 minutes.
Remove the pan from the heat and add chopped cilantro and parsley. Give them one more gentle stir.
Finish with a torn basil leaves.
