Spicy Potato and Ham Soup in the Crock Pot
This recipe is perfect when you find yourself with leftover ham slices or a ham bone. The crock pot is perfect for the ham bone and adding potato in makes this soup so delicious and creamy.
Having the leftover ham or ham bone after a holiday is perfect for making soup! Because I am the "soup" girl it is usually saved for me. I decided to make a creamy ham soup using the white potatoes as the cream. This was a simple and delicious version of Potato and Ham soup, enjoy!
In crock pot add all ingredients chopped in to serving size. You can leave the meat on the bone and any ham sliced can be chopped. Adding the lemongrass stalk and fresh spices give this crock pot soup a very rich flavor. Cook on low for 8 hours or on high for 4 hours. Remove the bone and using a fork shred the ham. Serve with a nice crusty bread. |
Ingredients:
4-6 slices of ham or one leftover ham bone 2 carrots, scrubbed 2 cloves garlic, sliced 1 onion 1 medium/hot pepper, seeds removed and sliced 2 stalks celery, chopped 1 lemongrass stalk 1 teaspoon fresh ginger, peeled and sliced 1 teaspoon cardamom out of the pod, crushed 1 teaspoon turmeric, finely chopped 6 cups distilled water black pepper to taste |
