STRAWBERRY SOUP
When I first started this website I added "Fruit Soup" in the index but I did not
even know what fruit soup was. When do you serve it? Is it dessert? What I have learned is that it is popular and served mostly for dessert. You can top
it with whipped cream, ice cream, crème fraiche, sour cream, fresh fruit or in a miniature cup on the side of cake. I guess I could have put this in the dessert category of our blog but decided to keep it on the "soup" side because it is soup!
This first recipe is so simple and so delicious. I have so many ideas and will create new recipes as the sweet fruits of summer come in season. I am thinking about peaches, mango, fig and pineapple but let's start with strawberries.
STRAWBERRY FRUIT SOUP
Ingredients:
2 cups hulled and sliced fresh strawberries
1 cup Orange Juice (fresh squeezed would be great but not necessary)
1 cup light plain yogurt plus 1 teaspoon vanilla
OR
1 cup light vanilla yogurt
1 teaspoon orange zest (or lemon, or lime)
mint for garnish (or sliced fruit, or whip cream, or crème fraiche, or ice cream)

STRAWBERRY FRUIT SOUP
Ingredients:
2 cups hulled and sliced fresh strawberries
1 cup Orange Juice (fresh squeezed would be great but not necessary)
1 cup light plain yogurt plus 1 teaspoon vanilla
OR
1 cup light vanilla yogurt
1 teaspoon orange zest (or lemon, or lime)
mint for garnish (or sliced fruit, or whip cream, or crème fraiche, or ice cream)
In blender combine all ingredients and process until smooth. Ladle into chilled into bowls or martini glasses. Garnish with mint or sliced fruit. Soup can be served immediately or chilled.
