Stuffed Spaghetti Squash
Spaghetti squash is so fun, easy and healthy. In this recipe I stuffed it with ground chicken, spices, fresh tomato and mozzarella cheese. You have to love this low carb dish, I will take spaghetti squash any day over pasta especially if I'm in a healthy mode. You serve this dish right in the squash and scoop out the "spaghetti" right with the topping in one yummy bite. This is a one dish dinner. I hope you love it!
Ingredient's:
1 medium Spaghetti Squash cut in half and seeds removed
2 garlic cloves chopped
1/4 pound ground chicken or turkey
1 large tomatoes, chopped
dash, oregano, basil, salt and pepper
1/4 cup shredded mozzarella cheese
Bake cleaned spaghetti squash on lined baking sheet in pre-heated oven at 375 for 45 minutes.
In fry pan cook ground chicken and garlic cloves over medium/low stirring until chicken is brown. Add spices and tomato and continue to stir for additional 5 minutes. Break tomato with the back of your spoon to small pieces and mix well. Turn heat off and add shredded cheese. Stir
Add half of the meat mixture to both halves of the squash. Bake in over at 350 for 15-20 minutes until cheese is melted and squash is warm. Serve right in the "squash bowl."
