Buttermilk Gazpacho with Cucumber and Radish

This  light and refreshing soup is perfect for hot summer days. It ONLY requires some vegetables, eggs and buttermilk (your hands, knife, cutting board, large bowl, mustard, salt, some patients and.....). 


Serves 4-6 Preparation/ Cook time: 20 minutes
Ingredients
2  quarts reduced fat buttermilk
2 cups  cucumbers (3 medium Persian cucumbers), chopped
5 medium radishes, chopped
2 boiled eggs, chopped
1 tsp. Dijon mustard
3-4 tablespoon fresh dill, chopped
1-2 tbsp. green onion, chopped
Salt to taste

Cut cucumbers and radish lengthwise into thin slices and then into fine julienne. Chop eggs, dill and green onion. Combine all ingredients in a large bowl. Add buttermilk, mustard, salt and mix well. Refrigerate for at least 1 hour.

Serve with  dill, cucumber and radish slices.
