Thai Sauce Green Beans
Anyone who loves Thai food will enjoy this quick and easy side dish.
Preparation Time: 10 min Cook Time: 15 -20 min
Serves 4 Ingredients: 1 pound green beans, topped and tailed 1 garlic clove, sliced 1/2 red chili, deseeded and chopped 1/2 tsp. paprika pepper (Paprika is a spice made from ground sweet bell pepper or mild chili pepper) 2 tsp. Soy sauce or Thai fish sauce 1/2 cup coconut milk 1 tbsp. olive oil 4 scallions, chopped 1tsp. lime juice |
Cut beans into 1.5-2 inch pieces and cook in boiling water or steam for 8-10 minutes. Place garlic, chili, paprika, soy or fish sauce, lime juice and coconut milk in a food processor or blender and process until a smooth paste forms.
Warm olive oil over medium heat, add scallions and fry for about 30 seconds. Add paste and bring to a boil. Simmer for 4 minutes to reduce by about half. Add beans and simmer for another 2 minutes. Serve hot.
