TOMATO AND BUTTERNUT SQUASH SOUP
I love the Roasted Tomato soup on our website so much I decided to use this idea but marry my favorite things, Roasted Tomato, Roasted Butternut Squash, Roasted Garlic and out of this idea came the creation of this soup. It is easy, delicious and healthy....ENJOY
Ingredients:
8 med size tomatoes cut in half
1 butternut squash cut in half
1 head garlic leave whole
3-4 sprigs of rosemary
3 carrots diced
1 teaspoon
tarragon, salt and pepper.
water or broth
Roast the tomatoes, squash and garlic in the oven at 375 for 45 minutes. While this is in the oven put your carrots in a soup pot and cover with water, add tarragon, salt and pepper to taste. Bring to a boil then simmer.
Add roasted tomatoes, squash and garlic to carrot broth. Puree half, mix back and serve.
