TOMATO PIE WITH FILLO (PHYLLO)
Starting with Fillo dough from the freezer and adding the shredded cheese and fresh tomatoes from my garden this could not have been simpler. My children loved it as well and you could very easily use your favorite cheese in place of the cheeses I used. Adding feta or goal cheese on the top would be great.
Personalize it the way your family would enjoy this dish.
What is Fillo. Filo. or Phyllo dough? It is paper thin sheets of unleavened flour dough used for pastries and baking in Greek, Middle Eastern and Eastern Europe cuisines. You can use several layers to strengthen the delicate sheets. Fillo dough is made of flour, water, a small amount of oil and white vinegar. It can be layered, folded, rolled or ruffled with various fillings. I love keeping a stock of it in my freezer, ready to go when the mood strikes for baking something sweet or savory.
Ingredients:
1/4 stick of butter or 2 Tablespoon butter substitute- melted
2 garlic cloves, minced
5-8 Fillo dough sheets or to your desired thickness
1 cup shredded mozzarella cheese
1/2 cup provolone cheese shredded or thinly sliced
4 medium red, green or orange tomatoes, thinly sliced and strained of running juices, the green tomatoes add a great flavor
salt and pepper to taste
1/3 cup fresh basil leaves, cut into small slices
Preheat oven to 375F.
Lightly grease a pie pan or baking sheet pan.
Melt butter and then sauté garlic in a small pan for 2-3 minutes
Place one sheet of Fillo at a time into pie pan and brush with butter garlic mixture.
Repeat with remaining Fillo dough brushing up the sides of the pie pan.
Roll fillo dough under to make shape of the pie pan and the rim
Place in oven for 3-4 minutes until garlic, butter and dough marry
Sprinkle Fillo with cheeses.
Salt and pepper tomato slices and place on top of cheese,( draining all the extra liquid ). Fun to make a pretty pattern if you like.
Sprinkle with basil
Bake pie 30-35 minutes until Fillo dough is crisp and cheese is melted.
Let sit before cutting while pie "sets", you can use any shape pan, just allow the dough to form the shape of the pan. Using a pie pan was fun for this tomato pie!

I made this tomato pie again and reversed the order of ingredients. This time I put the cheese on top of the tomatoes as you would a pizza.
I served it with arugula and a balsamic vinegar drizzle salad topping right on the pie. I will be making this again and again. This is really
a delicious dinner and with the Fillo crust it is very simple.
