HEALTHY TURKEY MEATBALLS TO "ADD IN" TO YOUR SOUP!
YUMMY! One of my favorite healthy non vegetarian add in for vegetable soup is ground turkey or ground chicken meatballs. I make them many different ways but this recipe is really delicious. I find that ground turkey can be dry and I like to make my meatballs juicy with a crunch and always a surprise in the middle so I add a crunch with quinoa and juicy tomaotes. Of course you can switch out spinach for the kale or opt out of one of these ingredients and they will still turn out delicious.
Ingredients:
1 pound ground turkey or ground chicken 1/8 cup cooked quinoa 1 medium tomato finely chopped 1/8 cup cooked kale-finely chopped 1/8 cup carrot or red pepper-finely chopped |

You can cook these meatballs two ways. You can drop them in your soup and let them cook the last 20 minutes of your soup cooking time or if you like a crunchy brown meatballs then you can pan fry them first and then drop in your soup. If you decide to pan fry you will not need oil., just brown them over medium heat and then finish cooking them in your soup for the last 5 minutes. My pictures show both cooking methods
