VEGETABLE AND ITALIAN SAUSAGE CHOWDER
Preparation Time: 15 minutes
Cook Time: 40 minutes Serve 8-10 Ingredients: 2 carrots, chopped 1 medium onion, chopped 2 stalks celery, chopped 3 bell pepper (red, green and yellow), chopped 28 oz. canned puree or crushed tomatoes 2 zucchini, chopped 2 chicken sausages, sliced 3 cloves garlic, minced 3-4 cups vegetable or chicken stock 2-3 tbsp. olive oil 1 tsp. oregano ½ tsp. black pepper ½ tsp. red pepper |

Chop all vegetables to the same size, about 1/2" cubes, except onion and garlic. Chop onion and garlic as small as possible.
In a large heavy-based pan, warm the olive oil over medium heat. Add onion, carrot, celery and garlic and sauté over medium heat for 5 minutes, stirring occasionally. Add bell pepper, oregano, salt, red and black pepper and cook for 5 minutes, stirring . Add tomatoes, chicken or vegetable stocks, bring soup to a boil, and cook for another 5 minutes. Add zucchini, chicken sausages and bring soup to a simmer. Then lower heat and simmer for about 20-25 minutes until vegetables are tender.
Serve with fresh oregano.
