Vegetable Soup with Pistou
Variation of this soup are million. It can be cooked with any season vegetables and pasta. Stock can be either vegetable or chicken. It even can be cooked with water, since pistou (pistou is a French sauce similar to pesto, but without pine nuts and Parmesan.) is the most important flavor notes in this soup.
Ingredients for soup:
2 garlic cloves, chopped
2 medium turnips, peeled and chopped
2 medium carrots, peeled and chopped
2 celery stalks, chopped
2 medium potato, peeled and chopped
1 ½ cups peas, fresh or frozen
1 medium size zucchini, chopped
8 cups water or vegetable stock
1 tbsp. olive oil
Sea salt and black pepper
Time or oregano
Ingredients for garnishing:
1 cup basil leaves
2 – 3 garlic
2 tbsp. olive oil
Sea salt
Heat 1 tablespoon of olive oil in a large pan over medium heat. Add garlic, celery, carrot, time, and cook, stirring, for 3 minutes. Add water or vegetable stock, potatoes and turnip. Bring to a boil, then reduce the heat and simmer for 15 minutes. Add zucchini and peas and simmer for additional 10 minutes. Season with salt and black pepper.
Garnishing:
Place the basil, garlic, salt and olive oil in a food processor and blend until smooth. You can replace the basil with parsley or add oregano to basil.
